Product introduction
Glucoamylase is extracted from Aspergilus niger by submerged fermentation. It can hydrolyze the α-1, 4-glucosidic bond of starch from the non-reducing terminal to produce glucose, and it can slowly hydrolyze the α-1, 6-glucosidic bond to convert glucose.
Unit definition
1ml of enzyme solution (or 1g of enzyme powder) at pH 5.50, 60℃, the number of milligrams of glucose formed by hydrolyzing 1.10% starch solution per hour was 1 unit of enzyme activity and expressed as U/g (U/ml).
Optimum pH
4.0-4.5
Optimum temperature
60℃
