Sunset yellow (SY), chemical name 6-hydroxy-5- [(4-sulfonylphenyl) azo] -2-naphthesulfonic acid disodium salt, molecular formula C16H10N2Na2O7S2, is a water-soluble azo colorant and a commonly used artificial food pigment.
