Product Introduction
Sucrose phosphorylase belongs to glycosylhydrolase 13 family. It is a kind of enzyme that catalyzes the transfer of glucoside bond and can catalyze the synthesis of 1-phosphoglucose from sucrose and inorganic phosphate. The enzyme mainly uses sucrose and 1-phospho-glucose as donors, and many substances such as polyhydroxyl sugars, sugar alcohols, phenolic hydroxyl groups, carboxyl groups as receptors to catalyze the synthesis of various glycosides. The SucrosePhosphorylase is prepared by recombinant sucrosephosphorylase, which catalyzes the phosphorylation of sucrose to produce D-fructose and α-D-glucose-1-phosphate. The formula is: Sucrose+Pi=α-D-glucose-1-phosphate+D-fructose.
The specific activity of the enzyme is >100U/mg, the enzyme can be heat-resistant by modification, the reaction temperature can be carried out at 30~65℃, the best reaction temperature is 55℃. Activity loss <30% after incubation at 60℃for 60h.
